Mr Tommy Toh is the 2nd generation dessert master specialising in traditional cantonese desserts. His secret – a trusty, heavy-weight stone grinder that has over 50 years of history. Mr. Toh starts the grind from 2am in the morning to create the daily bowls of yummylicious dessert paste.

  • No, it has become a routine for me. To make quality desserts, we have to use the traditional method. Machine blended paste just doesn’t taste good enough for me.

  • Well, this is a dessert invented by my son. It combines 4 different types of our paste – Almond, Peanut, Sesame, Walnut served in a bowl and poured layer by layer, using a circular motion to achieve the bullseye spiral effect. It requires a very steady hand to do this well.
